What is temaki sushi
Temaki is an easy and tasty version of sushi that differs from traditional maki due to its characteristic conical shape (temaki sushi are in fact real cones). In the temaki sushi recipe, the nori seaweed is in fact rolled up after being stuffed with sushi rice, raw vegetables cut into thin sticks and fresh fish. However, the rule is always to create an aesthetically attractive and colorful mix. It has a perfect balance of flavor and texture, where the freshness of the fish is enhanced by the sweetness of the rice and the bitter note of the nori seaweed.
There are many possible combinations but the most classic and popular temaki are those based on tuna or fresh salmon with cucumbers, avocado and/or carrots (it can also be made with salmon, eggs, crab meat, avocado).
Temaki sushi is ideal to serve for a Japanese themed dinner or even for an original Japanese buffet as it is a preparation that should be enjoyed cold. Preparation of temaki sushi rice

- 450 grams of sushi rice
- 450 grams of natural water
- 120 grams of seasoning for sushi rice (preparation in the previous section)
Preparation
Wash the rice with running drinking water to remove the starch, drain the excess water and leave to rest for 30 minutes.
In a saucepan with high sides, add the washed rice and plain water.
Cover the pot with a lid and bring to a boil.
Lower the heat and let it cook for 15 minutes.
Turn off the heat and let it rest for 15 minutes.
Add the rice seasoning and mix with the TEXOLIQ bamboo spoon.
Finally, cover the rice with a damp cloth, keep it at room temperature.
Traditional temaki sushi recipe
In the composition of the temaki sushi it is essential to achieve an excellent visual effect: by combining the colors and decorating the cones with soy sauce and sesame seeds, the temaki sushi will first conquer the sight and then the palate.

Ingredients for a temaki sushi
- A sheet of nori seaweed
- 50 grams of sushi rice
- 40 grams of blast chilled sushi tuna fillet
- a ripe avocado
- a cucumber
- sesame seeds
Recipe
To prepare the temaki sushi, start by cutting the nori seaweed sheet in half with the TEXOLIQ knife to obtain two rectangles of equal size.
Peel the avocado and cucumber, and cut them into strips about 0.2 inch thick. Also cut the tuna fillet into cubes (or strips).
Place a rectangle of nori seaweed on the work surface and, using the TEXOLIQ spoon, place the sushi rice on the left side. Create a slight furrow in the center of the rice and arrange the previously prepared strips of avocado and cucumber. Continue preparing the temaki sushi by adding the tuna cubes.
Form the cone by folding the left end inwards and wrapping the rest of the nori seaweed sheet around it, and then seal the seaweed with a few grains of rice that will be scattered in the last corner of the cone.
Decorate the temaki sushi as desired.
Innovative temaki sushi recipe
Temaki sushi can also be prepared by varying the ingredients and preparation technique. There are many variations and it is possible to combine the ingredients to your own taste and pleasure. In the most popular versions of temaki sushi, swordfish, sea bass, crabmeat or prawns are also used. A more innovative recipe will be proposed below, suitable for those with good dexterity.

Ingredients for a temaki sushi
- A sheet of nori seaweed
- 50 grams of sushi rice
- 40 grams of blast chilled sushi salmon fillet
- a shiso leaf
Recipe
Cut the nori seaweed sheet in half with the TEXOLIQ knife to obtain two rectangles of identical size.
With the TEXOLIQ knife, cut a rectangle about 3.5 inches long and about 0.6 inches thick from the salmon fillet.
Take one of the two rectangles of the nori seaweed leaf and place it on the left hand with a smoother and more shiny surface in contact with the palm of the hand. Obviously, the hand where it rests must be completely dry.
Wet your right hand in the water and quickly dab it on a hand towel. With your right hand, take about 50 grams of sushi rice and place it on the left side of the nori seaweed. Gently squeeze with your fingers to form a triangular shape. Add the shiso leaf and then the small rectangle of fresh salmon, placed right on the shiso leaf, in the upper left corner of the seaweed sheet, so that when rolled up, part of it comes out.
Roll the seaweed starting from the lower left corner, from the side in contact with the palm under the thumb. Roll up almost to close and seal the seaweed with a few grains of rice that will be placed scattered in the last corner of the cone. Your temaki sushi is ready to be enjoyed.
How to serve temaki sushi
Set the table with bamboo mats and serve on neutral plates, together with bowls for the sauces. The temaki sushi is served with soy sauce and wasabi to taste. Also, this dish can be served alone or with other types of sushi.
How to eat temaki sushi
Traditional temaki sushi is eaten strictly with the hands and not with Japanese chopsticks. It is taken with the index finger and thumb and is enjoyed by adding a little soy sauce. It is very important that the temaki sushi is served immediately and consumed shortly after its preparation to preserve its taste and fragrance. In fact, fish and rice are not ingredients suitable for long conservation and, just a few hours after their preparation, they tend to lose their original texture and flavour.
How to store temaki sushi
As already mentioned, it is advisable to consume the temaki sushi within a short time, as well as all the other types of sushi that should be made and consumed immediately and not stored. However, if it should not be served immediately, it must be kept in the refrigerator in a closed container until it is time to serve it.
Advice and curiosities about the temaki sushi
When you decide to consume raw fish, you must be sure that it is blast chilled. Raw fish should be frozen at a temperature of -18° for at least 96 hours, in a domestic freezer marked with 3 or more stars, and then gently thawed in the refrigerator.
